Recipe: Bone Broth and Chicken Noodle Soup

Why Bone Broth is good for you?

1. Heal and seal your gut. Bone broth is excellent for “healing and sealing” your gut, to use Dr. Natasha Campbell-McBride term. Dr. Campbell’s GAPS Nutritional Protocol, described in her book, Gut and Psychology Syndrome (GAPS), centers around the concept of “healing and sealing” your gut through your diet.

Helps heal and seal your gut, and promotes healthy digestion: The gelatin found in bone broth is a hydrophilic colloid. It attracts and holds liquids, including digestive juices, thereby supporting proper digestion

2. Reduces joint pain and inflammation, courtesy of chondroitin sulphates, glucosamine, and other compounds extracted from the boiled down cartilage

3. Promotes healthy hair and nail growth, thanks to the gelatin in the broth

4. Fights inflammation: Amino acids such as glycine, proline, and arginine all have anti-inflammatory effects. Arginine, for example, has been found to be particularly beneficial for the treatment of sepsis5 (whole-body inflammation)

Glycine also has calming effects, which may help you sleep better

5. Promotes strong, healthy bones: As mentioned above, bone broth contains high amounts of calcium, magnesium, and other nutrients that play an important role in healthy bone formation

6. Inhibits infection caused by cold and flu viruses, etc.: A study4 published over a decade ago found that chicken soup indeed has medicinal qualities, significantly mitigating infection

7. It’s very economical! About $13 for an organic chicken and under 5 dollars in veggies and this soup can last the whole week.

What is the difference between broth and bone broth?

TIME. Broth can often be created in an hour or two but bone broth takes over 24 hours. Bone broth actually simmers out all the minerals , gelatin and collegian rich nutrients from the bird. Once the bones almost disintegrate when rubbing it that is when you know the broth is complete.

Now let’s get into it:

First I like to cook the bird; I think it gives the soup a more roasted taste and hearty. I cooked the chicken (seasoned with sea salt, pepper, garlic powder and rosemary) on 400 for 15 mins and then brought it down to 350 and cooked for 15 mins for every pound aka a 5 pound chicken will cook for an 1 hour and 15 mins.

Then I pick off my chicken and put it in a separate bowl. Save the meat! Side Tip: make a nice garden salad sprinkled with the cooked chicken for dinner that night or lunch tomorrow.

Get your Mirepoix (apparently French for celery, carrots and onions chopped) and garlic and I like Leeks so I diced some of those up as well and I added parsley but only a little.

Add carcass back into the pot and add potatoes (optional) you can always do this later on in the process but I add it in the beginning to thicken my broth. If you don’t want to thicken the broth and prefer a lighter broth just add the potatoes after the 24 hour simmer period.

Add water and 2-3 tablespoons of Apple Cider Vinegar

SIMMER FOR 24 HOURS! (Let the bone broth magic commence!)


Chicken Noodle Soup with Bone Broth

After 24 hours or longer take out as much broth as you would like to set aside.

Now let’s make some soup aka my favorite food
Take your broth and add in some of my favorite
1) Quinoa pasta
2) Potatoes
3) Parsley
4) Chicken meat

Bring your bone broth to a boil, add your ingredients, let it simmer for 15-20 mins and BAM amazing wholemade, nutritious and delicious chicken noodle soup (bonus tip: play Webstar’s song Chicken Noodle Soup around this time)

So there you go a great way to make broth for just sipping throughout the day or a way to use it in a soup or get a little fancy and make a stew. So many options! It’s a soulful superfood and it’s so easy to make and this recipe is up for your creativity and interpretation so make it your own.
